Food connects us to some of the most important environmental, societal and ethical issues of the day – climate change, biodiversity loss and water scarcity, hunger in conjunction with obesity, and inequality. These problems are increasingly well recognised. There is general agreement that something needs to be done – but there is far less consensus about what that ‘something’ should be.
